Our first vinegar product!

Made with maple syrup produced on Washington Island. Apple Maple Vinegar is a great alternative to balsamic or rice wine vinegars to give recipes a distinctive apple maple flavor.

Spruce Tip Apple Cider Vinegar

This fine vinegar is a synthesis of timing and terroir. As we end the vinegar processing year in the spring the spruce tips are emerging. We harvest this new spring growth from each tree, but are careful to leave most of the new growth for the health of the tree. The tips are fresh with light pine and citrus flavor. We steep the tips in freshly produced vinegar to create a uniquely flavored vinegar. Bright and fresh. Pine Soul.

Barrel Aged apple Cider Vinegar

This fine vinegar is a natural extension of our craft as cider makers. All things must pass, people age, and cars rust. Similarly, all cider, if left exposed, becomes vinegar. This strange, magical transformation is a wondrous thing. The vinegar craft, like regular cider making, is about creating the right conditions so the results are predictable and delicious - and we believe we’ve done it here. The barrel aging rounds, concentrates and yet softens the flavor.

High Residual Sugar Apple Cider Vinegar

This fine vinegar has High Residual Sugar and is a natural extension of our experience producing Ice Cider. Like the real Balsamic vinegar of  Modena, we concentrate the sugars of the freshly pressed juice. We ferment the juice into cider, and then acetobacter-ferment the cider into vinegar. The result it a bold, sweet, fruit forward vinegar. Fresh and electric with acidic punch. All of the sugar and flavor is from the fruit it was made with.

High Residual Sugar Cherry Vinegar

This fine vinegar has High Residual Sugar and is a natural extension of our experience producing ice cider. Like the real Balsamic vinegar of Modena, we concentrate the sugars of the freshly pressed juice. We  ferment the juice into cider and then acetobacter-ferment the cider into vinegar. The result it a bold, sweet, fruit forward vinegar. Fresh and electric with acidic punch. All of the sugar and flavor is from the fruit it was made with. POW! WAM! YEOW!
